Thanks to reading a discussion on scones in R.F. Kuang's novel Babel I had the urge to make a batch.
These took 20 minutes from a standing start to a strawberry jam and mascarpone-topped finish.
225g self-raising flour
1 tsp baking powder
A pinch of salt
60g cold butter, diced
150 ml milk plus some to glaze
Rub the butter into the combined dry ingredients until the mixture resembles fine breadcrumbs.
Add the milk and mix lightly with your fingers.
Turn out onto a floured board, and with minimal handling shape into a thickish disc.
Using a floured cutter (say 2 ½”/6 cm) cut into rounds without twisting.
Brush the tops with milk.
Bake for 10 minutes on a floured or lined tray in a hot oven - Gas 7/200C/Aga roasting
They should be light to the touch and browned underneath as well as on top.
