'Quincemeat', Nigel Slater's quince and cardamom mincemeat or 'Christmas jam' - the recipe is in The Christmas Chronicles. Made without suet, not too sweet, fragrant and lightly spiced, it's good with cheese, he says, and I can second that. Very much worth a try if you have the book and can lay hands on quince.

I tried to order some Quince from Riverford but I wasn't fast enough. I do have the book though so I can aim for next year.

I now have a quince tree (variety Isfahan) but it is only two years old so I doubt if it be producing much, if any, fruit for some time. I have the book you mention so many thanks for the recommendation; in principle I can buy quince in my area of London so perhaps I will try it before I have my own crop. Cardamom is probably my favourite spice!
