The second outing (first one here) for this week's cookery book, River Cottage Veg Every Day, had us making a simple dish of pasta and peas: a very cheap supper, and one that's high on comfort value as well as taste.
'Macaroni peas' - we used orzo because that's what was in the cupboard - involves simmering frozen petits pois for a minute, then blending about half of them with a little of the cooking water, some garlic-infused melted butter and some Parmesan or other hard cheese. Combine that purée with the remaining whole peas, season and toss with the cooked pasta. Finish with shredded basil or flat-leaf parsley and more Parmesan.
(I'd gladly have this again a.s.a.p.).

Oh lovely - and I thought I'd invented this - perfect student food as you cook it all in one pot. Though Hugh's version is more refined with the pea-whizzing and basil and herbs. I want it for supper now.

Sounds quite tasty. One of my favourite suppers has all these ingredients but uses broad beans instead of peas. I am salivating just thinking about it (grim revelation, sorry!!).

As I have Hugh's book on the coffee table at the moment (borrowed from work while I decide if I need my own copy), I just had to make this for dinner last night. It was delicious. I'm always looking for new, quick weeknight dinners & as I always have all the ingredients for this on hand, I think I'll be having it again soon. Thanks.

I enjoy reading about your cookbooks, every thing looks so fresh and lovely in the photos!
I came across and encouraging cookbook recently..."the Bonne Femme Cookbook" by Wini Maranville. Her recipes are not difficult and the results are so good!
