If you have a copy of Tender to hand,
turn to page 594 and try the Baked Tomatoes with Chillies and Coconut - extremely good, and the smells as the dish cooks .... heady is the word (see below)!
I cut back on the chillies slightly, but I used home-grown root ginger (grow-your-own instructions and picture here), so I think Nigel would approve. We ate this just with pain de campagne for the simplest of suppers.
Anything with tomatoes....count me in,. Your glimpses of this book are making my need for it greater and grreater.

This book is on my birthday wish list...but planting season starts this month. Decisions.... Thank you for mentioning what you accompanied the dish with, I always appreciate that.

I'm a bit behind in reading. This dish sounds so delicious. I looked around for the recipe since I can't begin to own all the cookbooks you have - though I do have a large collection myself.
