At the risk of boring everyone, here are some more muffins. I wanted to try out the basic recipe given in The Thrifty Cookbook - Kate Colquhoun suggests lots of variations for savoury as well as sweet versions, and one of them
involves raspberries - but I was also very taken by Mary's recipe for white chocolate, raspberry and macadamia blondies which she kindly gave us in the comments on this post. I had no macadamias, but I melted some of the white chocolate along with the butter to go into the mixture, and cut the rest into chunks to mix in with the rasps. They are seriously good, and the texture is better than that of Nigella's ones which I made last week.
(Although we still have a few of these left, another batch has already been requested - and no, despite all the baking that goes on here, my family are not fat!).

How do you like The Thrifty Cookbook, I have been toying with the idea of buying it, I enjoyed listening to an interview with the author a while ago. Would you recommend it? Of course, it's not as if I need another cook book, the truly thrifty thing would be to stop buying cook books!

I've been trying out raspberry and white chocolate muffins from The Yellow Door cookery book recently (local deli, can't find an online reference to the book). They've been very good. Like you, I wasn't impressed with Nigella's. Blueberry and white chocolate coming up next...

Yes, but neverthelss, chosen for me specially by Harriet (who knows how much I like them) to serve with the pancakes she made me for Mothers' Day lunch! In the spirit of the book, the leftover raspberries were used for the muffins.

Hi, Your cornflower photo captured my eye, so I had to come and visit! And I am very glad I did! You have lots of neat stuff to browse through!
And.... I LOVED that raspberry/white chocolate photo. Yum! The muffins looked pretty amazing too!

Hi Karen - while in the kitchen making the biscuits from the Fifth Business post(my version anyway - based on what was in the cupboard)decided to give the blondie recipe a go. My son, who is off for Easter, says they are not much to look at but are a "taste sensation" - what more can be said!
