I went ahead with the recipe (Marmalade Apricot Muffins from Susan Reimer's Muffins Fast and Fantastic) but used demerara sugar instead of granulated, poppy seeds in place of apricots - though that was my intention all along - and made a very small quantity of vegetable oil stretch a long way.
